Viticulture
Crafted from carefully selected vineyards in the heart of Piemonte, where established vines and sustainably managed plots express the region’s distinctive terroir. The grapes are hand-harvested at optimal ripeness to preserve their freshness, purity, and vibrant fruit character, reflecting the estate’s commitment to low-intervention viticulture and authentic winemaking.
Winemaking
The grapes are harvested and brought directly to the winery, where whole bunches are gently loaded into a pneumatic press. They undergo a short skin maceration of up to four hours before being softly pressed to extract delicate colour and aromatic freshness. Fermentation takes place in temperature-controlled stainless steel tanks. Malolactic fermentation is intentionally avoided to preserve the wine’s natural acidity, vibrant fruit character, and crisp freshness. The wine rests in stainless steel tanks throughout the winter, allowing it to naturally settle and develop balance before being bottled in the following spring.
Profile
Produced on clay soils with 35-40 year-old vine stock in Castagnole delle Lanze, planted at 280m above sea level with a south-east exposure, the wine reflects the estate’s commitment to sustainable viticulture and precision hand-harvesting. The result is a structured yet supple wine with layers of dark fruit, spice and earthy elegance, offering both immediate appeal and long-term cellaring potential. yet supple wine with layers of dark fruit, spice and earthy elegance, offering both immediate appeal and long-term cellaring potential.
Pairing
A fresh, vibrant rosé that pairs beautifully with seafood, sushi, fresh salads, pasta, antipasti, charcuterie, and soft cheeses. Its naturally bright acidity and refreshing character provide excellent structure, making it equally suited as an aperitif or enjoyed throughout a meal. Best served chilled.
