Viticulture

Carefully managed grape production in the vineyard with the use of natural sulphurous agents. No weeding is practiced ,only manual or mechanical mowing between rows. The harvest is exclusively conducted by hand,removing underripe and damaged clusters.

Winemaking

The grapes are picked and moved in small boxes to the cellar, where they are destemmed and fermented with maceration of the skins in contact with the grape must for approximately 14-18 days, after which the wine is drawn off. The final stage is the malolactic fermentation which reduces the high acidity of this wine, making it softer and more balanced.

Profile

The Barbera d'Asti Superiore DOCG 2023 has a deep red colour. Pleasant roundness of tannins and good length, balanced acidity with excellent structure and complexity.

Pairing

The Barbera d'Asti Superiore DOCG 2023 pairs exceptionally well with rich, savoury dishes that complement its vibrant acidity and expressive flavours of ripe cherry, blackberry, subtle spice, and delicate hints of vanilla. A particularly successful pairing is braised beef short ribs served with creamy Parmesan polenta, where the wine's freshness cuts through the richness of the beef while its fruit and gentle oak character enhance the depth of the slow-cooked flavours. It is equally well suited to pappardelle with wild mushrooms, grilled rosemary lamb chops, osso buco, or mature cheeses such as Parmigiano Reggiano and Pecorino, making it a versatile choice for an elegant Italian-inspired dining experience.
